Frozen Raspberry Daiquiri

Following the success of the Frozen Blueberry Daiquiris, we thought we’d sip on a slight variation of this frozen fruitiness – one with a little more zing. A similar method was used in building this cocktail, remembering the four dimensions to balance a perfect drink: sweet, sour, strong and weak.

What an amazing bright red colour those plump raspberries produced! They immediately gave the impression of a fruity drink full of flavour and once served up in Dickon’s LSA martini glasses, garnished with a couple of the remaining raspberries, they looked quite the part, I must say.

2 oz White rum

1 oz Cointreau/Triple sec

1/2 oz Lime juice

6 raspberries

1/ tsp Demerara Sugar

5 ice cubes (crush first for easier blending)

Blend all ingredients together and serve in a Martini glass. Serve and drink immediately.
